Whats Cooking? Simple Chicken Casserole

My mother-in-law shared this recipe with me when Lee and I were newly married and I have been making it for the past seven years! So here is one of our family’s go to meals…simple chicken casserole.

This recipe will serve 4 adults

Grocery List:

4 or 5 boneless skinless chicken breasts

2 cans of cream of chicken soup

6 oz of sour cream

1 sleeve of Ritz crackers

2 tablespoons of butter {optional}

How To:

Boil and shred your chicken breasts { I put my chicken breasts in the crock pot with a little water and let them cook on low all day, they turn out perfect every time! I also use my kitchen aid mixer with the paddle attachment to shred my chicken. It is super fast…like under 20 seconds!}

Then mix in 2 cans of cream of chicken, about 6 ounces of sour cream, and salt and pepper to taste.

Spread your mixture into a casserole dish {mine is a 7in x 11in} that has been sprayed with Pam.

Next crush up one tube of Ritz crackers and sprinkle over the top of the casserole mixture.

Now this part is completely optional BUT to take this to extra yummy dab the top with a tablespoon or two of butter!

Bake at 350 degrees for about 30 minutes or until everything is bubbly and you can smell the toasted Ritz crackers. Let it cool for a few minutes before you serve.

Serve with a big glass of sweet tea and enjoy your yummy and easy meal made with {southern} love!

Tell Me About You Tuesday

Since I am new to the whole blogosphere I thought I would take a little time each Tuesday to tell you a little more about me! So here goes my first Tell Me About You Tuesday…

What does the last text you sent say?

I send Lee pictures of the girls and what we are doing during the day while he is working, does that count? If not my last text says “see you then!!” to a friend who I am meeting for lunch this week.

What time do you wake up most mornings?

During the summer, I wake up when one of my kiddos wakes me up! No alarm for me in the summertime. Typically one of my girls is up by 6:30 each morning, so I am usually up by then.

What do you do to relax at the end of a stressful day?

At the end of everyday, stressful or not, I take a HOT shower and snuggle in bed and watch one episode of Seinfeld before bed. It’s my favorite way to relax 🙂

If money was no object, where would you want to move to?

I think maybe Nashville is where I would want to move…or somewhere in Texas {Texas is on our family’s vacation bucket list, we’ve never been but we want to!} Before I could think of where I would want to move to, all I could think about was Montana! That is where Lee has always said he would move to if he could.

If you were going to be on a desert island for six months, what one item would you bring with you?

Ummm…sunscreen! When I get back to civilization I don’t want to be shriveled up like a prune, haha!

What is your favorite month and why?

Most years I would say my favorite month is March. Libby’s birthday is in March, spring break is in March, and a lot of years Easter falls in March {or very close to it}, but this year I am going to say I think my favorite month may be November. We are heading to Disney World in November and I am so excited!

What magazines do you read?

I subscribe to a lot of magazines! My favorites are Southern Living, Elle, Allure, and Better Homes and Garden.

What did you have for dinner yesterday?

Last night we had yummy chicken casserole! {I’m going to share the simple recipe tomorrow}

Do you drink coffee or tea? How much per day?

Yes, yes I do! I drink coffee everyday, around 4 cups and I drink sweet tea with my dinner at night.

What is your favorite vacation you have ever taken?

Easy, Las Vegas! Lee and I went the summer we got married and I loved it! Beautiful hotels with the most amazing pools, wonderful food and shopping, and spectacular shows. I have heard a lot of people say they didn’t think Vegas was for them but it was for me! We didn’t gamble really {I spent $10 on slots just to say I did} and I didn’t see anyone naked 🙂 It was nothing but good, clean fun for us and I have been begging to go back!

Weekend Recap

Our weekends during the summer start on Friday, since Lee doesn’t have to work on Friday’s during summertime. We jump started our Friday with a daddy & daughter doughnut date. Lee and Libby (in her pjs) went for doughnuts and brought some home to Whitney and I. Since Whitney isn’t old enough to eat doughnuts yet…I went ahead and ate hers for her 🙂

We eventually all got dressed and made our way over to Landmark Park to spend the morning. First up we hit the big playground they have. My big girl loves to slide, and slide she did! It was more crowded than we were used to and Libby kept insisting that her daddy slide with her and he happily obliged her.

After we got our fill of the playground, we made our way to the nature boardwalk. We stopped and looked at the historic buildings on site as we passed them. Libby couldn’t understand why she couldn’t go behind the roped off area in the historic Presbyterian Church.

The boardwalk is great! It was shaded ( a welcome break from the heat) and we saw lots of turtles, which Libby loved!

On our way out we stopped for ice cream at the Martin Drugstore.

After the park we had lunch at our favorite diner, visited the library, and made a grocery store stop before heading home for naps!

Saturday it was supposed to rain in the afternoon so we decided to get out and enjoy the morning before we were stuck inside. We took the girls with us to the farmer’s market. Libby asked for a sno cone but ended up not liking it, so Lee ate it for her. I loved the local pottery and Lee liked talking to the organic beef farmer. After the farmer’s market we ran a few errands before heading back home for lunch and naps.

After everyone had woken up from their nap we decided to brave the rain and finish some things on our to do list. Lee went to get a haircut and I took the girls to the bookstore. Libby found a My Little Pony that she couldn’t live without…but she is learning to live without it…it was enormous and expensive and not coming home with us!

We settled in for the evening with a homemade pizza and The Little Mermaid before bathes and bed. It was a fun Saturday!

Sunday was our day of rest! We had a lazy morning of playing and spending time together.

We had a yummy lunch of meatball sub sammies and then headed out to the home improvement store to pick up some supplies for a project we are working on.

I needed an afternoon cup of coffee to make it through the rest of the day….I call it my mommy coffee 🙂

For dinner I used our left over meatballs and marinara, added some milk and cheese and made a yummy sauce to eat with noodles. It was delish!

We ended our weekend with a family walk and some coloring.
